Adapted Jamie Oliver recipe “Perfect Roast Chicken” from the book Ministry of Food.
Ingredients:
1 chicken
1 bouillon chicken cube
freshly ground black pepper
1 tsp dried mixed herbs
fresh rosemary, parsley, thyme
1 lemon
olive oil
Method:
Preheat oven to 225°C. Rub the chicken with oil, crumbled bouillon cube and black pepper. Place the fresh herbs in the chicken, make slices in the lemon but leave it whole, adding the lemon to the chicken’s cavity to seal it. Place the chicken on top of the vegetables and roast the chicken for about 1 and a half hour, or until golden brown. It is a good idea to baste the chicken every now and then. Remove from the oven and set aside for at least 10 minutes. My daughter insisted on squeezing the lemon over her chicken and if you are a lemon lover then I suggest you do the same!
