Tunisian Djerbi Rice

Looking for something else to cook in that couscous pan you bought last summer besides couscous? Rice djerbi is the perfect dish. Easy to prepare and worth the wait.

Ingredients
400gr basmati rice
200 gr beef, thinly sliced
4 tbsp olive oil
handful chickpeas
3 finely chopped onions
1 pack fresh spinach or frozen spinach
3 tbsp tomato puree
1/2 tsp dried Turkish mint
1 heaped tbsp tabil spice
1 tsp salt
freshly ground pepper

Method
Fill the bottom pan with water and bring to the boil. In a big bowl mix all the ingredients together with your hands. Once the water is boiling fill the top pan with the rice mixture and steam for about 1hr. Stir every now and then to make sure the rice is evenly cooked.

Great recipe Lisa, I am going to make this…and I wanted to know if I can include it in my next blogpost about the popular handpainted Tunisian bowls I sell in the shop…many people only see pasta or paella bowls and it is nice to serve a traditional recipe.
