Honey Chicken

Growing up in Australia I have a lot of happy memories of dining out at the local Chinese restaurant.  I was so happy to finally be able to create this mouth watering dish. Thanks to my Uncle who passed on this recipe.

Ingredients
marinade
500gr chicken breast
½ tsp corn flour
¼ cup water
½ bicarb soda
½ tsp salt
sunflower oil

honey sauce
3 tbsp honey
2 tsp worcestershire sauce
2 tsp soya sauce
2/3 cup water
3 tsp corn flour
1 green onion, finely chopped
2 tsp sesame seeds

Method
Cut the chicken into strips and leave to marinate for at least 15 mins. Cover the pieces in corn flour and fry off in small portions. Mix the ingredients for the sauce in a small pan, heat well. Mix the corn flour with a little bit of water before adding to the sauce. Heat well until the sauce has thickened. Pour the sauce over the chicken, and sprinkle the green onions over the top. Serve with white rice.

Tunisian Tagine

Tunisian Tagine is not a stew! This dish is actually an egg dish, a North African version of a quiche without a crust. Feel free to change or add ingredients to your own liking: chicken, spinach, mince meat…

Ingredients
olive oil or butter
1 onion
1 chicken breast
salt & freshly ground pepper
1 tbsp tabil spice
8 eggs
½ cup bread crumbs
½ cup milk
finely chopped flat parsley
150gr grated cheese

Method
Pre heat the oven to 200°C and make sure that the oven dish is well oiled with olive oil or butter. Fry off the onions in olive oil, chops the chicken into small pieces and add to the pan. Season with salt and pepper, add tabil and cook for 5 minutes and leave to cool slightly. In a big bowl, break the eggs, add half of the cheese, milk, parsley and mix well. Add the chicken mix and stir. Pour the mixture into the bowl and spread the rest of the grated cheese over the top. Bake until golden brown, this takes about 40 minutes.
