Easy Croissant Pudding

Adapted recipe from Epicurious.com “Croissant Pudding

Ingredients:
4 stale croissants
2 1/2 cups milk
3 eggs
1 egg yolks
1/2 cup sugar
2 tsp vanilla essence

Method:
Heat oven to 175°C. Place a roasting pan in the oven, add 1/2 inch of hot water. Tear the croissants and place in a a glass dish. Add milk, eggs, sugar and vanilla essence in a bowl, mix with an electric mixer for 2 minutes. Pour the mixture over the croissants and leave to stand for a couple of minutes. Press the croissants with a spoon to make sure that everything is covered. Carefully place the glass dish in the pan of hot water, bake fore 1 hour or until golden brown.

It really tasted good but for me too rich, the other here fought over the leftovers!
